2,5-Dimethylpyrazine has odors of nuts, peanuts, mustiness, earthiness, potatoes, fat, and cocoa powder.
A 7.5 mg/kg solution has flavors of nuts, potatoes, and fat. It is mainly used in the preparation of edible
flavors for cocoa, peanuts, coffee, nuts, potatoes, and seasonings. This product was approved as an allowable
food flavor in China's GB 2760 - 1996.
 

The use of 2,5-dimethylpyrazine 2,5-dimethylpyrazine (C6H8N2) is a widely used pyrazine compound, mainly used in the following fields:

1. Food additives Aromaenhancing function: because of its strong aroma of fried peanuts, chocolate, cream, etc., it is widely used to prepare essence for baked food, meat, coffee, nuts, cocoa, potatoes and other foods. The flavor can be significantly improved with very low addition (1– 2 μ g/kg). Natural sources: Naturally present in foods such as coffee, peanuts, cocoa, and grilled beef, 2,5-dimethylpyrazine produced through biological fermentation is more in line with the demand for natural food additives.

 

2. Pharmaceutical intermediates Hypoglycemic and lipid-lowering drugs: used as key intermediates for the synthesis of active ingredients such as glipizide (hypoglycemic drug), acesulfamethoxazole (lipid-lowering drug), and 5-methylpyrazine-2-carboxylic acid. Drug synthesis raw materials: Their methyl groups can be introduced into other functional groups through chemical reactions to assist in the synthesis of biologically active drug molecules.

 

3. Industrial and chemical applications Dyesynthesis: As an organic synthesis reagent involved in the construction of dye molecules, especially in carbon negative ion reactions, it is used to introduce active functional groups.
